another flour-less cake? yes, exactly...another one. this one is very different from all the other ones i made before. i doubled the original recipe to get a bigger cake :)
otro pastel sin harina? si, exactamente...otro. este es muy diferente de todos los demás que hice antes. dupliqué la receta original para conseguir un pastel más grande :)
ingredients/ingredientes:
100 g dark chocolate/chocolate amargo
40 g cocoa powder/cacao en polvo
40 g cornstarch/fécula de maíz
100 g unsalted butter/mantequilla sin sal
80 g sugar/azúcar
8 eggs/huevos
chop the chocolate and melt it in a double boiler. let it cool down a little.
pica el chocolate y derrítelo en baño maría. déjalo que se enfríe un poco.
in a small bowl, sift the cornstarch and cocoa. mix them well.
en un tazón pequeño, tamiza la fécula de maíz y el cacao en polvo. mezclalos bien.
in another bowl whisk the butter until it gets light and creamy. add half of the sugar and whisk until the butter and sugar combine into a homogeneous mixture.
en otro tazón bate la mantequilla hasta que quede ligera y cremosa. agrega la mitad de azúcar y bate hasta que la mantequilla y el azúcar se convierten en una mezcla homogénea.
add the egg yolks and whisk for couple more minutes.
añade las yemas de huevo y bate por unos par de minutos más.
in a large bowl whisk the egg whites until they get white. add sugar and continue beating until they get stiff.
en un tazón grande bate las claras de huevo hasta que quedan blancas. agrega el azúcar y sigue batiendo hasta el punto de turrón.
gently fold in one third of the dry ingredients (cocoa and cornstarch) into the egg whites. afterwards fold in the rest.
suavemente incorpora una tercera parte de los ingredientes secos (cacao y fécula de maíz) en las claras de huevo. después incorpora el resto.
fold in the melted chocolate and butter and egg yolks mixture.
incorpora el chocolate derretido y la mezcla de mantequilla con yemas de huevo.
engrasa el molde para hornear con mantequilla y espolvorealo con fécula de maíz. con mucho cuidado vierte la masa en el molde.
preheat the oven to 200°C. place the pan with the batter into a large baking pan half filled with boiling water and bake for 30 minutes. cut the cake into cubes and enjoy :) serve sprinkled with powdered sugar or with vanilla curd.
precalienta el horno a 200°C. coloca el molde con la masa en un molde más grande medio lleno con agua hirviendo y hornealo durante 30 minutos. corta el pastel en cubitos y disfrutalo :) sirvelo espolvoreado con azúcar glas o con cuajada de vainilla.
Se ve muy bueno y me da mucha curiosidad.., cuando pueda lo voy a probar.

ReplyDeleteevka, mne kolacik velmi chutil, bol viac horky nez sladky...tym, ktori maju radsej sladsie by som doporucila pouzit 70 alebo menej percentnu cokoladu a poprasit ho praskovym cukrom :)
