corn flan/flan de elote























flan is a very delicious dessert. i usually make flan napolitano, but this time i prepared corn flan. as many other mexican recipes, i got it from my mother in law. instead of using fresh corn as she does, i used canned sweet corn.
flan es un postre muy delicioso. usualmente preparo el flan napolitano, pero esta vez prepare el flan de elote. como muchas otras recetas mexicanas, me la dió mi suegra. en vez de utilizar el elote fresco, usé elotes dulces en lata.

ingredients/ingredientes:

1 can condensed milk/lata de leche condensada
1 can evaporated milk/lata de leche evaporada
5 eggs/huevos
250 g sweet corn/elotes

cajeta

















blend together the eggs, both milks and corn.
licua junto los huevos, las dos leches y elotes.









spread cajeta on the bottom of the ceramic pan.
extiende la cajeta en el fonde del molde de cerámica.
























pour the flan mixture over cajeta and cover the pan with aluminum foil. take a bigger baking pan and fill it with water. put the covered flan pan into it. bake in a preheated oven (180°C) for about hour and a half (if inserted wooden stick or knife comes out clean, it is done).
vierte la mezcla de flan sobre la cajeta y cubrel el molde con papel aluminio. toma un molde para hornear más grande y llenalo con agua. coloca el molde de flan cubierto en el molde con agua. hornea en el horno precalentado (180°C) durante aproximadamente una hora y media (si el palillo de madera o cuchillo insertado sale limpio, el flan esta listo).

leave the flan to cool down in a room temperature and place it in the fridge afterwards for at least one hour. loosen the sides of the flan with the knife. put a big plate over the flan pan and turn them around. cut and enjoy :)
deja que el flan se enfría en la temperatura ambiental. colóqualo después en el refrigerador por una hora. afloja los lados de flan con un cuchillo. pon un plato grande sobre el molde de flan y voltealos. cortalo y disfruta :)

  5. Lubka,ja sa uz tolko chystam vyskusat flan,a stale som sa k tomu nedopracovala..tento kukuricny moze byt velmo zaujimavy,snad sa raz k tomu dostanem..lakave fotecky:)

  6. This looks tasty! I used to live in a community with a huge Mexican-American population and I formerly spent a lot of time working in Mexico. I miss the REAL Mexican food in both places a lot. I'm delighted to have found your blog!

  7. @Martinka, ja na flan nedam dopustit :) moj najoblubenejsi flan je kavovy - davam don instantnu kavu a liker kahlua, ale ani tento kukuricovy nie je zly :)

    @Felicia, i miss real mexican food as well. that's why we try to go to mexico at least once a year and buy a lot of ingredients to be able to cook real mexican food at home :) thank you for the visit :)

  9. @Pily a mi me gusta y a mi esposo le encanta :) fue la primera vez que lo hice con elotes de lata porque en mexico siempre hemos usado los elotes frescos. cada uno sabe un poco diferente pero rico :) un abrazo :)

  11. have you ever tried baking it in anything besides the ceramic pan.. i do not have one of those?!

    1. i have not, but i know that my mother in law uses aluminun pan to bake flan and it works just fine :)
