mexican independence/independencia de méxico


































this is the first time after 5 years i will not be celebrating the anniversary of mexican independence in mexico... but to celebrate it here as well, i am planning to cook a very tasty mexican dish that i will share with you next week :)

many people think that mexican independence day is celebrated on the fifth of may (cinco de mayo). it is not like that. fifth of may is the anniversary of the battle of puebla and mexican celebrate their independence on the night of 15th of september and the day of 16th of september.

esta es la primera vez después de 5 años que no voy a celebrar el aniversario de la independencia de méxico en méxico... pero para celebrarlo aquí también, voy a preparar un platillo mexicano muy rico que voy a compartir con ustedes la próxima semana :)

mucha gente piensa que cinco de mayo es el dia de la independencia mexicana. no es así. cinco de mayo es el aniversario de la batalla de puebla y los mexicanos celebran su independencia en la noche de 15 de septiembre y el dia 16 de septiembre.


























the beginning point of the war for mexican independence was the "cry of dolores" (also called "cry of independence). this event consists of the call that the priest miguel hidalgo y costilla (together with ignacio allende and juan aldama) made in the morning of september 16, 1810 to his parishioners to make them revolt against colonial authority in new spain. the call was made by ringing the famous bell of dolores in the parish church in the town of dolores (now called dolores hidalgo) located in the state of guanajuato.
el punto cronológico con cual se inició la guerra de independencia de méxico era el "grito de dolores. este evento consiste en el llamado que el cura miguel hidalgo y costilla (junto con ignacio allende y juan aldama) hizo en la mañana del 16 de septiembre 1810 a sus parroquianos con el fin de que estos se sublevaran en contra de la autoridad virreinal de la nueva españa. el grito se hizo al tañer la famosa campana de dolores en la iglesia parroquial del poblado de dolores (hoy llamado dolores hidalgo) ubicado en el estado de guanajuato.



















once the people gathered outside the church father hidalgo deliveded a moving sermon, after which he shouted: 

"live the independence! live the virgin mary of guadalupe! die bad government!"  

from that moment began the war of independence, which concluded with the signing of the treaty of cordoba on august 24, 1821 and the entry of army (ejército trigarante) to mexico city on september 27, 1821, even with which is officially consummated the independence od mexico from spain. 

una vez congregada la población frente a la iglesia, el cura hidalgo pronunció un emotivo sermón, al final del cual gritó:  

"viva la independencia! viva la virgen de guadalupe! muera el mal gobierno!"

a partir de ese momento se inició la guerra de la independecia que culminó con la firma del tratado de córdoba el 24 de agosto 1821 y la entrada del ejército trigarante a la ciudad de méxico el 27 de septiembre 1821, evento con el que se consuma de forma oficial la independencia de méxico con respecto a españa.


during the 19th century was the "cry" remembered on september 16, but president porfirio díaz changed the celebration to the eve, to coincide with his birthday on the day of september 15.
durante el siglo XIX fue el grito conmemorado de día 16 de septiembre, pero el presidente porfirio díaz cambió la celebración para la víspera, para coincidir con sus cumpleaños, el día 15 de septiembre.


currently is the bell of dolores on the high cornice of the presidential balcony of the national palace in mexico city. every evening of september 15, the sitting president makes the bell sound to commemorate the anniversary of the beginning of the mexican independence process, proclaiming the "vivas" to the country (inspired distantly by hidalgo and changing every year), finishing with unchanging "viva mexico".
actualmente la campana de dolores se encuentra en la alta cornisa del balcón presidencial de palacio nacional en la cuidad de mexico. cada noche de 15 de septiembre, el presidente en turno hace sonar a la campana en conmemoración del aniversario del inicio del proceso independentista mexicano, proclamando las "vivas" a la patria (inspiradas lejanamente en las de hidalgo y varían cada año), terminando con invariable "viva méxico".

orejas and basic recipe for puff pastry/orejas y la receta básica para pasta de hojaldre

















orejas are another type of mexican sweet bread. they are made of different type of dough than conchas or cuernitos but they equally delicious :)
orejas es otro tipo de pan dulce mexicano. está hecho de un diferente tipo de masa que conchas o cuernitos pero están igualmente deliciosos :)

ingredients/ingredientes:

500 g all purpose flour/harina de trigo
10 g salt/sal
50 g unsalted butter/mantequilla sin sal
250 ml water/agua
250 g margarine/margarina

sugar/azúcar

























place the flour on the working table, make a hole in the center, put there the salt and butter and mix a little the ingredients that are in the center. add half of the water and start to mix in the flour. pour in the rest of the water and mix with the rest of the flour. knead until you get a more less united but not uniform and soft dough. cut a cross in the dough without reaching the bottom. let it rest for 20 minutes.
haz una fuente con la harina, coloca al centro la sal, la mantequilla y mezcla un poco los ingredientes del centro. agrega la mitad del agua y empieza de integrar la harina. vierte el resto del agua e incorpora toda la harina. amasa hasta obtener una masa unida pero sin cuerpo. haz un corte en cruz en la masa sin llegar hasta abajo. déjala reposar 20 minutos.










meanwhile soften the margarine and make a block out of it.
mientras suaviza la margarina y forma un bloque.

























sprinkle the dough with flour. using a rolling pin, roll it out into a shape of cross. keep a little more dough in the center. place the margarine in the middle and cover it well as shown in the pictures above. flatten with a rolling pin, hitting the dough horizontally and vertically.
espolvorea la masa con harina. con un rodillo, extiende la masa en forma de cruz. deja un poco más en el centro. coloca la margarina en el medio y envuélvela bien como enseñan las fotos de arriba. aplana con el rodillo con golpes horizontales y verticales.

























start rolling it out into a rectangular shape. do not forget to sprinkle the dough with enough flour. the pastry should be 3 times longer than wide. fold one side to one third of the dough. then fold the other end. turn the dough, roll it out and repeat the same procedure (folding and rolling out). let the dough rest for 20 minutes covered with a piece of plastic foil.
comienza a extenderla en forma rectangular. no olvides espolvorear la masa con suficiente harina. la pasta debe quedar 3 veces más larga que ancha. dobla un extremo en una tercera parte. después dobla la otra parte. voltea la pasta, extiendela y repite el mismo procedimiento (doblando y extendiendo). reposa la pasta durante 20 minutos tapada con un plástico.













repeat the same thing twice (roll out, fold, turn, roll out, fold, rest for 20 minutes). refrigerate for 8 to 24 hours.
repita lo mismo dos veces (extiende,dobla, voltea, extiende, dobla, reposa por 20 minutos). refrigera 8 a 24 horas.


















divide the pastry in two parts. roll it out into a rectangular shape about 3 mm thick. sprinkle both the working table and the dough with sugar. press lightly with a rolling pin.
divide la pasta en dos partes. extiendela en forma rectangular de 3 mm de grueso. espolvorea azúcar en la mesa y sobre la pasta. presiona ligeramente con el rodillo.

























fold twice the left end until you get to the center. do the same with the right end. join both sides and press a little. cut into 1 cm wide slices. place them on a prepared baking pan. bake them in a preheated oven (210°C) for 10 minutes, turn them around and bake for 5 more minutes.
dobla dos veces el extremo izquierdo hasta llegar a la mitad. haz lo mismo con el otro extemo. junta las dos partes y presiona un poco. corta en rebanadas de 1 cm de ancho. ponlas en una charola preparada. hornea las orejas en el horno precalentado (210°C) durante 10 minutos, voltealas y hornea por 5 minutos más.


















i sprinkled my second batch of orejas with a little cinnamon :)
espolvoreé mi segundo lote de orejas con un poco de canela :)










let them cool down a little because the hot caramelized sugar can burn your tongue :P
dejalas que se enfríen un poco porque el azúcar caramelizado caliente puede quemar tu lenga :P

plum and almond tart/tarta de ciruela y almendras

looking through my cookbooks i found this recipe. luckily i had all the necessary ingredients at home. it did not take a long time and the whole kitchen was full of sweet delicious smell.
mirando a través mis libros de cocina encontré esta receta. afortunadamente tuve todos los ingredientes necesarios en mi casa. no pasó mucho tiempo y toda la cocina estaba llena de delicioso olor dulce.

ingredients/ingredientes:


for the dough/para la masa: 


200 g all purpose flour/harina de trigo
100 g unsalted butter/mantequilla sin sal
1 tablespoon sugar/cuchara de azúcar
pinch of salt/una pizca de sal
5 tablespoons cold water/cucharas de agua fría


for the filling/para el relleno: 


150 g ground almonds/almendras molidas
75 g sugar/azúcar
50 g melted unsalted butter/mantequilla sin sal derretida
500 g plums/ciruelas
2 eggs/huevos
2 tablespoons sugar to sprinkle the tart/cucharas de azúcar para espolvorear la tarta


in a bowl, mix together flour, sugar and salt. cut in the butter into small cubes and cut it in until it resembles coarse sand. add the water spoon by spoon and mix until the dough just sticks together and you are able to create a ball. cover it with plastic foil and put to the fridge for 30 minutes.
en un tazón mezcla la harina, el azúcar y la sal. corta la mantequilla en cubitos chiquitos y mezclala con harina hasta que parezca arena mojada. mezcla hasta que la masa se pega y puedes hacer una bola. cubrela con el papel plástico y guarda en el refri durante 30 minutos. 

whisk together the eggs and sugar until it gets foamy on the top. add the melted butter and ground almonds. mix well.
bate los huevos con el azúcar hasta que la parte superior de la mezcla queda espumosa. agreaga la mantequilla derretida y las almendras molidas. mezcla bien. 

turn on the oven to 200°C. take the dough out of the fridge, roll out and place into prepared tart pan. take a fork and make few holes in the dough.
prende el horno a 200°C. saca la masa del refrigerador, extiendela y coloca en el molde preparado. toma el tenedor y haz unos hoyos en la masa.







pour the egg and nut mixture into the prepared pan with crust. cut the plums into wedges and put them on the tart. sprinkle with sugar. bake for about  30 minutes.
vierte la mezcla de huevo y nuez en el molde preparado. corta las ciruelas en gajos y colocalas en la tarta. espolvoreala con azúcar. hornea durante aproximadamente 30 minutos.

chilaquiles



















it's been a while since we had mexican breakfast, so it was about the time to change that. i did not have to think too much...chilaquiles was the first thing that came to my mind :)
hace rato que no tuvimos desayuno mexicano, por eso era la hora de cambiar eso. no tuve que pensar mucho...chilaquiles fueron la primera cosa que vino a mi mente :)

ingredients(the amount depends on the number of people eating the chilaquiles)/ingredientes(la cantidad depende del número de personas comiendo los chilaquiles):

corn tortillas/tortillas de maíz
tomatoes/jitomates
serrano pepper/chile serrano
onion/cebolla
garlic/ajo
fresh epazote (i used dry one)/epazote fresco (yo usé seco)
salt/sal

vegetable oil for frying/aceite vegetal para freír








fill a saucepan with water and boil the tomatoes and the serrano peppers.
llena una cacerola con agua y hierve los jitomates y chiles serranos.






























cut tortillas into triangles (older dry tortillas are better). heat the oil and quickly fry the triangles from both sides. put them on a paper towel to get rid of the extra oil.
corta las tortillas en triángulos (tortillas viejas son mejores). calienta el aceite y rápidamente fríe los triángulos de los dos lados. colocalas en una toalla de papel para eliminar el aceite extra.












peel the tomatoes and mix them together with the serrano peppers, onion and garlic. pour the mixture into a saucepan. add epazote and salt. cook it on a low flame until it starts boiling and does not taste like "raw".
pela los jitomates y licualos con los chiles serranos, cebolla y ajo. vierte la mezcla en una cacerola. añade el epazote y sal. cocina a flama baja hasta que empiece a hervir y no sepa como "crudo".




when the sauce is ready, add the fried tortillas and stir. serve with refried beans, cream or panela cheese and fried egg.
cuando la salsa esté lista, agrega las tortillas fritas y revuelve. sirve con frijoles refritos, crema o queso panela y huevo estrellado.
